Lemon Cream Cheese Pie--Redemption!


So I told you all about my cooking disasters last week. I was still mad about the pie and still wanting it, so when I did my weekly grocery shopping yesterday, I bought all the stuff to make it again. I made it last night and it turned out perfectly.


makes 2 pies
Cream Cheese layer
Beat 1 8 oz brick cream cheese, softened (I use the low fat stuff)
Add 1 can (14 oz) sweetened condensed milk
Add 1/3 C lemon juice, 1 t vanilla
pour into graham cracker crusts and chill
Lemon Layer
in a pot, stir together...
1 3 oz box Jello Cook & Serve (NOT instant) Lemon Pudding
2/3 C sugar
1/4 C water
Add 3 egg yolks and 2 C water
Cook and stir to a full boil
Cool 5 minutes
Add 2 T lemon juice, 2 T butter
Pour over Cream Cheese Layer--Chill
